Since the IIGS is backwards-compatible, what are the best retro games that everyone should put on my Floppy Emu that actually stand the test of time.

It's going to depend on everyone's personal preference. I mean, there's a very wide range of games developed for the Apple II series, from dungeon crawlers like Akalabeth to early-80s arcade type games (Elevator Action, Burger Time), to text adventures (Infocom, etc) to more modern genres like Choplifter! or Airheart. Many of the most popular games have already been compiled into disk images that you can download and run on a FloppyEmu or wDrive, called "Total Replay", "Total Recall" and "Pitch Dark".
I'm not going to recommend Lode Runner and Choplifter - others will do that.
But I like games like Aztec and Prince of Persia and many of the old 8-bit games.
But...if you've got a IIGS then you should be taking advantage of IIGS specific games with their superior graphics and sound, including some modern remakes of classic games like PacMan, BuGS (centipede) and Super Mario Bros.
And cool games like Battle Chess, SpaceAce, Arkanoid, Tomahawk...

I find myself coming back to Drol now and then. I don't go deep in this game, but I do find it's nice to just run through the first couple levels now and then.
