In Windows, they have a control panel of some sort that can change the icon and program assosiated with each and every file of a certain type. Is there such a thing for OS X?

Select a file of the type you're interested in. Do a "Get Info" on it in the Finder. (Command-I or File-->Get Info.)
In the Get Info window, use the pop-up "Open With" menu to select your preferred app. Then click the "Change All..." button. Authenticate yourself if prompted for a password.
That's it - the icons of all apps of that type should change to reflect their new status as "children" of the new parent app.

It didn't work, or in most times i tried, it only worked for the document I selected.

Do all the files have the same extension? And you did click the "Change all..." right?

The thing in the file column says com.appleworks.apple.doc for the file type when I change the opening app to Appleworks. I no longer have Word on this Mac and only some of the docs have a .doc extension, but some are hidden.
