Please forgive what might be a stupid question, but I finally managed to resurrect my machine and need to purchase some extra floppy disks for it (it uses the original Apple drive that came with the machine). Is it OK to try HD disks in these machines, I have read warnings that these can cause issues in old drives, so should I only look for DSDD disks? After all the time to get it going, I don't want to make a bad choice on disks.

I would stick to the DS/DD diskettes (500KB unformatted) if I were you. It's never wise to format a high density diskette as anything but high density (the same logic applies with low density diskettes in high density drives).
It would not damage anything to attempt to use high-density floppies. But it's not very reliable. It's a bit like trying to record on metal-particle tape without the right bias; it works, but very poorly.
Don't worry about damaging the disk drive mechanism, though.
That's advisable. You will have better chances of being able to write data and have it "stick."
