Not that I'm aware of, I periodically look around for stuff like that and hadn't seen any.
It's not an Apple Chip but Stynx has done this on an accelerator chip

Unfortunately, I have not seen that he has published his results.
Getting the ZipChip gate array/asic to someone like him, Ken Shirriff,
or perhaps someone from the visual6502.org project would be very useful.
Given that it seems to be a standard cell array, it should not be too
difficult to sort out with clean and focused images.
I have found this website in which they
have decapped a few of Apple's custom chips.
One is for the graphics tablet and
the 2 others. 1 for IWM and the other
for the SWIM chip on the Apple ][ 3.5 controller card.
This site just doesn't decapp Apple chips but others
also, so have a look.

This seems like it's an important project if there's ever going to be a hope of reproducing these chips in the future.
