Please find in the attached PDF a Pinout diagram and how to connect the pins of the connectors to connect the Apple /// to one of those Taxan RGB Vision III color monitors. Unfortunately there's not much software for the Apple /// that takes advantage of color. In Apple II mode the Apple /// doesn't seem to support color.

There was some Apple /// specific software that supported color graphics. Visiplot, Visitrend, etc. Those were add-ons for Visicalc to make graphs and charts.
