"Use some fat resistors instead of the mainboard to test the power supply for your first time."
That makes a ton of sense. I'm intending to strip it all down, clean it and look for any obvious issues before putting power to it, so that would be easy to do.
"If you have a known good working PSU then I would strongly recommend you use that until you have taken a look at the PSU that came with the system."
That also makes a ton of sense. I've got a 2+ with a wonky keyboard and damaged case that I'll probably dismantle.
I'm debating the possibility of pre-emptively recapping the PSU. I've had the joy of exploding a largish electolytic cap before. It was quite a mess.
You could order one of the ReactiveMicro power supplies. Then you could keep the original… original.
Hmmm..... I'll think about that. I guess I've been assuming that recapping wouldn't affect the value, but perhaps this is the best approach.
If you need an empty Apple II Power Supply case to do this, let me know and I can see if I have one that I will send you for just the shipping costs. I would keep the original one original and make "demo" one for using every day. I did that with by original Apple II.

Thanks for the offer! Fortunately I do have a beat-up Apple II+ that I could sacrifice for parts.
Cheers!
