I had a chance like that recently, but just had to pass. They aren't useful as a modern internet-browsing PC, so you have to think of a specific task for them that they can still do...
Is there a charity that would take them? Honestly given their age, bulk, relative fragility, and software obsolescence it would almost seem like it would be more trouble and cost than they were worth. (A quick Google suggests to me that the outfits that do this really prefer laptops, and that said laptops be less than seven years old. An eMac is neither.)
I had to ship 20 computers to Haiti on my own dime I'd probably order 20 new Raspberry Pi Model 2s with cases, and 20 new sets of input devices and monitors to ship directly there. It'd probably cost significantly less than properly packing said eMacs.
Make a MAME Arcade! Choose your favorite 20 favorite arcade games and build the housings, game interfaces, and get to it!

I think i might see if i can fit an ATX MB in one, probably not fiting tho.
