Was offered a riduculously cheap, working TAM earlier, and thought about the capabilities of it and whilist it can run an early copy of iTunes, there are two things I'd like to make it do?
Can I get WiFi on it?
...I know it has a comms slot which I can get an ethernet card for, so I'm thinking i can get an ethernet-to-802.11b wireless adaptor piggybacked onto that?
Can I get any form of video output, say to a projector out of it?
...It has a PCI slot, so a videocard sounds a feasible idea, although it must be quite limited for space in the back of that??
What does this TAM acronym mean?

The TAM can take any PCI card(s) that will fit, so this includes ethernet, USB, a PCI wifi adapter, even a PCcard adapter. As you mention, an ethernet-to-wifi bridge is probably the best bet, along with that commslot-2 NIC.
At the logic board, the TAM video is driven from a standard (?) 54/6400 style video-out. Here's the LCD driver board from my TAM BTW. It stands between the logic board and the LCD and translates the LB's VGA-style output into a signal the LCD can use. It's surely possible to intercept the signal at that 16-pin header and send it to a VGA display instead. And of course, a PCI video adapter would also do the trick.

I don't know if iTunes works on pre-OS-X.
The Twentieth Anniversary Macintosh does not natively support Mac OS X.
Other World Computing's XPostFacto, which let's legacy Macs run OS X, does not currently support the Twentieth Anniversaty Macintosh.
The current status on the Twentieth Anniversary Macintosh on their website says: Unsupported, but work in progress.
I'm pretty sure that all iTunes versions up to 3 have OS 9 compatibility.
And you can get iTunes going in 8.6 with a bit of alteration... dont remember which version it was...
... and SoundJam rocks, if you can find it anymore (you have to go hunting, and I wont hand it out per the developers requested that it not be distributed anymore... tho if you Google youll find someone who apparently missed that.)
Not any more tricky than getting an ethernet -> WiFi adapter going for something like an Xbox or PS/2. The CS Ethernet card is just a regular ethernet card to the TAM. If you use an Apple CS card the drivers should be included during the OS install. Then you just treat the WiFi bridge (adapter, dongle, widget...) like you would for any other ethernet you would plug it into. It's probably for a web browser based config that you access from what ever it is plugged into to setup the WiFi end. You can get the WiFi adapters pretty cheap all over the place. The nice thing is if you get a 10/100 CS card and the WiFi dongle does 100Base-T and 802.11G, you'll get nearly full G speeds if you have a G AP. Plus, you don't sacrifice your valuable PCI slot(s).
