I am amazed by some of the SE and Plus servers out there, and am interested in making my dead SE into one. Dead as in the hard disk doesn't work, but I should be able to just use floppies right? Most of the SE servers I've been to are FDHD, which mine isn't. Will that be a problem? I'd like to use os 6.0.8 and machttp. Will that be possible with 800k?

While you may indeed get an SE running as a Web server off of a floppy disk, you won't be able to serve a whole lot. The disk will pretty much be full from the system and server files, so you'll be lucky if you can cram an HTML page and small GIF image on there to serve.
Doesn't the OS just run off of memory once it's done starting up? You could start swapping disks then, right? I was also thinking about taking a scsi hard disk from another one of my macs and throwing it in there. Would that work, or does the SE require some sort of special hard disk. Argh. I wish I had the right screw driver so I could open this thing up and try this out.
Oh yeah... I was also wondering if system 7.0.1 is ESSENTIAL for internet and TCP and webserving. Or is it possible with 6.0.8?

Been a long day after a longer week.
Now you can crank that server off a floppy at a blazing 8 MHz.
God, I hate the interface. It's useless. Can't cut and paste. I can't originate a thread because the inferface is too %$^^&%$#-ed up to handle it. It's *really* frustrating.
