Do you think there would be any market for replacement Apple ][ or //e keyboards built with modern Cherry key switches? These would be plug-in replacements for the original keyboards and would probably use the existing key caps.

Not sure- I would buy one because I have a dead mm5740 in one of my II+'s. However, you can always build the PS2 adapter.
I don't like the feel of the original keyboards- they are hard to type on. The IIe keyboards seem much better for typing.
Were you thinking of the Early ][e's with the Light Colored Key-caps and White lettering or the Later ones with the Dark Colored Key-caps and Black lettering??
They seem to have different key mechanisms.. And sound completely different..
Well there is a market for early style replica datanetics keyboards (made with cherry switches). With daughterboard they are starting to go for around $200 bucks, without daughterboard (earlier style) they are hard to find and the last one I think went for aroun $400+ on eBay.
The cost of a replica might be close to $200 for a kit with switches and everything...
For the IIe, I think the cost isn't justified, you can pick up a IIe just for the keyboard for less than 100 and use parts from two machines to make one good one.
